Slow Cooker Creamy Tortellini Soup

Slow Cooker Creamy Tortellini Soup Recipe
Serves: 6

Ingredients:
1 pound ground Italian sausage
1 onion, chopped
2 carrots, chopped
2 ribs celery, chopped
2 cloves garlic, minced
1 tbsp. Italian seasoning
1⁄2 tsp. salt
1 (32 oz.) container beef broth
3 tbsp. cornstarch mixed with ¼ cup water
3 cups half and half
1 (12 oz.) package cheese tortellini
4 cups baby spinach

Directions:
Step 1
In a large skillet over medium heat, add sausage. Cook until browned and crumbled. Transfer to a slow cooker.
Step 2
Add onion, carrot, celery, garlic, Italian seasoning, salt, and broth to the slow cooker.
Step 3
Cook on high for 3-4 hours or low for 5-6 hours. Skim off any fat that is on top of the soup.
Step 4
Stir in cornstarch slurry and half and half. Add tortellini and cook on high for 45 minutes, or until the soup is thickened.
Step 5
Add spinach and stir until submerged in the liquid. Cover and cook about 5 minutes, until spinach is wilted.
Step 6
Serve and refrigerate leftovers.
